Barkday cake recipe
Furbaby friendly sponge cake with mashed potato frosting!
This recipe is easy to make and the ingredient are all furbaby friendly but everythingin moderation.
Ingredients
For the cake:
2 eggs
120g peanut butter (only use 100% peanuts type)
65ml vegetable or canola oil
165ml milk or water
100g honey or apple sauce (you can leave this out)
2 ½ cups grated carrots (roughly 2 large carrots)
300g plain wholemeal flour (you can use white flour)
2 ½ tsp baking soda
For the frosting:
600 – 700g potatoes, peeled and cut into chunks
150 – 200g yoghurt (plain or unsweetened) or water
Directions:
For the cake:
- Preheat oven to 180C/160C fan forced
- Grease and line the base of 2 x 20cm cake pans
- Whisk together eggs, peanut butter, oil, honey and milk/water. Don’t worry if you have a few peanut butter lumps.
- Stir in carrots and then add flour and baking soda. Stir until just combined (don’t over mix as you will end up with a hard cake).
- Divide batter between the cake pans.
- Bake for 25 minutes or until a skewer comes out clean.
- Cool on racks before frosting.
For the frosting:
- Cook the potatoes until soft, boil, steam microwave whichever method you prefer.
- Whip potato and yoghurt with an electric beater until smooth and fluffy as possible. It may take around ten minutes and you may not get it completely smooth.
3.Add extra water to get it to the consistency of human buttercream frosting if required.
Frost:
- Spread ¼ of the frosting on one cake and top with the other.
- Frost the top and sides remembering to reverse some for the piped decorations if you wish.
Finally slice and serve to the furbabies and watch the fun!
